Independent research published in Applied Sciences (Aristotle University of Thessaloniki, 2024) found Greek oak honey to have the highest antioxidant activity of all nine monofloral honey types studied — including Manuka — with a total antioxidant activity of 106.2 mg AAE/100g, compared to Manuka's approximately 31 mg AAE/100g. Unlike floral honeys, oak honey is a honeydew honey — produced by bees collecting secretions from oak trees rather than flower nectar. This gives it a fundamentally different profile: higher mineral content, deeper colour, lower sweetness, and a bold, slightly bitter-sweet character with roasted and malty notes.
