Authentic, luxurious raw forest honey — a golden expression of the pristine mountains of Greece.

Lab-tested honey with verified Total Activity (TA) ratings, ethically harvested with care for both people and bees, and valued for its purity and origin.

Our Story

Troy Greek Raw Honey began with a simple promise — to share the authentic character and tradition of Greek forest honey with homes around the world.

Born and raised in the mountains of Greece, Spiros Papadopoulos grew up watching his grandfather tend hives nestled among wild thyme and fir forests. The honey they produced wasn’t just a sweet food; it was a meaningful part of daily life, valued for its purity, origin, and connection to nature — a tradition passed down through generations.

When Spiros moved to Canada, he was surprised by what passed for “honey” on supermarket shelves. Ultra-filtered and heat-processed, most products bore little resemblance to the raw forest honey of his childhood — stripped of texture, aroma, and natural complexity. He began importing small batches from his family’s apiaries, initially just for friends and family. The response was immediate: people noticed the difference in depth, taste, and authenticity.

Our commitment to transparency and quality means every batch is independently lab-tested for its Total Activity (TA) rating — a recognised marker of quality and origin in authentic forest honey. We work directly with traditional beekeepers who practice sustainable beekeeping in remote Greek mountain regions, preserving both their craft and the pristine environments that make this honey so distinctive.

An Uncompromising Approach to Purity

Our Mountain Bees

Our honey comes from Apis mellifera macedonica, a resilient mountain bee species native to northern Greece. These bees forage among pristine wildflowers, fir forests, and oak woodlands at elevations of 800–1200 meters. This remote environment, far from intensive agriculture and pollution, allows them to produce honey with distinctive character shaped by place and season.

The ancient practice of nomadic beekeeping allows our partner beekeepers to follow seasonal blooms, carefully relocating hives to capture the unique qualities of each floral source. This traditional approach yields honey with naturally occurring properties reflected in its Total Activity (TA) ratings — a laboratory measurement widely used to distinguish authentic raw forest honey by quality and origin.

Every jar can be traced back to its specific apiary, harvest date, and primary floral source. We believe this level of transparency is essential in an industry often affected by adulteration and unclear sourcing, and it allows each harvest to be appreciated for its true provenance.

From Mountain to Table: Our Promise

Greek forest honeys — particularly dark honeydew varieties such as oak, fir, and pine — have long been valued for their depth, complexity, and distinctive character. Academic research from institutions including the Aristotle University of Thessaloniki has explored the unique composition of these honeys, highlighting how their botanical origin and minimal processing set them apart from more commercial varieties.

Rather than relying on claims or comparisons, we focus on preserving what makes these honeys authentic: origin, integrity, and tradition. Each variety expresses the landscape it comes from, shaped by forest ecosystems that are increasingly rare in modern food production.

Our commitment to authentic beekeeping practices means we never:

- Heat-process our honey
- Ultra-filter to create artificial clarity
- Blend with cheaper or unrelated honey varieties
- Add sweeteners or adulterants
- Use antibiotics in our hives

Instead, we preserve honey exactly as nature intended — raw, unprocessed, and true to its source — allowing each harvest to retain its natural structure, aroma, and character from mountain to table.

Sustainable Practices

We believe in protecting the delicate ecosystems that make authentic forest honey possible. Our approach to sustainability is grounded in long-term stewardship, respect for tradition, and responsible sourcing.

Our practices include:

- Supporting traditional beekeepers and their families through fair, direct compensation
- Using recyclable glass jars and minimal, environmentally conscious packaging
- Maintaining diverse habitats around apiaries to support pollinators year-round
- Harvesting only excess honey to ensure strong, healthy colonies
- Avoiding chemical treatments and relying instead on natural hive-care methods

When you choose Troy Greek Raw Honey, you’re not simply selecting a premium food — you’re supporting sustainable beekeeping, traditional knowledge, and the preservation of natural landscapes that have shaped honey production for generations.
