Troy Greek Raw Honey began with a simple promise — to share the authentic character and tradition of Greek forest honey with homes around the world.
Born and raised in the mountains of Greece, Spiros Papadopoulos grew up watching his grandfather tend hives nestled among wild thyme and fir forests. The honey they produced wasn’t just a sweet food; it was a meaningful part of daily life, valued for its purity, origin, and connection to nature — a tradition passed down through generations.
When Spiros moved to Canada, he was surprised by what passed for “honey” on supermarket shelves. Ultra-filtered and heat-processed, most products bore little resemblance to the raw forest honey of his childhood — stripped of texture, aroma, and natural complexity. He began importing small batches from his family’s apiaries, initially just for friends and family. The response was immediate: people noticed the difference in depth, taste, and authenticity.

Our Mountain Bees
Our honey comes from Apis mellifera macedonica, a resilient mountain bee species native to northern Greece. These bees forage among pristine wildflowers, fir forests, and oak woodlands at elevations of 800–1200 meters. This remote environment, far from intensive agriculture and pollution, allows them to produce honey with distinctive character shaped by place and season.
The ancient practice of nomadic beekeeping allows our partner beekeepers to follow seasonal blooms, carefully relocating hives to capture the unique qualities of each floral source. Our Fir honey is independently verified at 23.5+ Total Activity (TA) by Minerva Scientific Ltd, Derby, UK (lab reference FS10059924, September 2025). Our Oak honey is verified at 21.5 TA (lab reference FS10059923). Both scores exceed the 9.5 reporting minimum by more than double.
Independent peer-reviewed research published in Applied Sciences (Aristotle University of Thessaloniki, 2024) found that Greek oak honey — the same varietal as Troy Greek Raw Honey's lab-verified Oak Honey (21.5+ TA, FS10059923) — shows the highest antioxidant activity of nine monofloral honey types studied, at approximately 3.4× Manuka's antioxidant activity (106.2 mg AAE/100g vs. ~31 mg AAE/100g).
